Breakfast for Rushed Morning Multi-Taskers: 4 Ingredient Cookies

When the sun rises during the week, most people pull the pillow over their heads and swat at the snooze button. After multiple repetitions, all of their good intentions of enjoying a wholesome breakfast of scrambled eggs, toast, and orange juice continue to lounge in bed while they frantically scrub in the shower. They substitute a bowl of instant oatmeal instead, pour it into a thermos, and try not to wear it while eating on the jerky bus ride to the office.

 

With 90 seconds of planning, that rushed bowl of oatmeal can easily be transformed into a much more satisfying—and portable—breakfast. Before showering, simply twist the oven knob to 350° for a quick preheat. After toweling off, step back into the kitchen, mash up a banana and oats, and put it in the oven to bake before brushing your teeth and combing your hair. You’ll even have time to straighten your tie or apply mascara as the cookies (yes, cookies for breakfast!) cool. And your fellow commuters won’t shift away from you on the bus anymore—they’ll ask for a taste instead!  

 

 

Banana Breakfast Cookies

makes 16 cookies (serves 2)

These aren’t too sweet, and they have more of a muffin-like consistency. Add a teaspoon of brown sugar or mini chocolate chips for a special treat!

2 medium very ripe bananas

½ c. whole-wheat flour

½ c. oats

¼ tsp baking powder

¼ tsp vanilla (optional)

  1. Preheat the oven to 350°, and line a cookie sheet with parchment paper.
  2. Using the back of a fork, mash the bananas in a medium bowl. Stir in the vanilla, if using. In a separate bowl, whisk together the flour, oats, and baking powder. Add the dry ingredients to the bananas, stirring until just incorporated.
  3. Drop spoonfuls of dough (about 1 tbsp each) onto the prepared pan. Bake at 350° for 9-11 min. Cool on the pan for 4 min before turning out onto a wire rack to cool completely.
