It’s Still Sandwich Season!

Just when I decided to beat the heat with a little sandwich streak, the winds blew into town and the temperature dropped 20°. Great. The seasons are mocking me… As the bag of sandwich things threatened to mol, I wanted to put them out of their misery with a protein-packed filling. But what?  

 

I always stash a bag of frozen chicken in the freezer for meaty dinner emergencies, so I raided my reserves to fix for my filling with a little cooking magic. But how?

 

To smite the unpredictable seasons, I chose a summer staple: chicken salad. Sautéed on the stove, dressed up with a bit of rosemary, and healthified without the mayo. And surprise of all surprises, my picky eater devoured two!

Rosemary Chicken Salad Sandwiches

serves 2

This is a great make-ahead meal. Cook the chicken and mix up the dressing a day before, and simply toast the bread just before serving. Couldn’t be easier!

1 large chicken breast, or 2 chicken tenderloins

½ c. plain Greek yogurt

2 tsp Dijon mustard

½ tsp dried onion flakes

¼ tsp rosemary

pinch of salt

pinch of black pepper

2 whole-wheat sandwich thins

  1. Season the chicken with salt and pepper, and cook in a pan coated with nonstick cooking spray over medium heat for 4-5 min per side, or until cooked through. Cut into bite-sized pieces.
  2. In a medium bowl, mix together the yogurt, mustard, onion, rosemary, salt, and pepper. Add the chicken, stirring to coat. Chill 30 min, or up to 1 day.
  3. Toast the sandwich thins until light golden brown, and evenly divide the chicken salad between the buns.

    Yum! I usually don’t touch chicken salad with 39 foot pole because of the mayo… But this looks delightful!

      I was the same way! I only ate “regular” chicken salad once in my whole life. It tasted decent, but with this version, I don’t feel any guilt. (And it tastes even better anyway!)

      I’m glad to hear it! They’re so easy to make and delicious too! Some of my friends believe sandwiches are only for lunch, but I think they’re tasty at any time of day. What’s your favorite sandwich?
