Two days before Christmas, my guy scrambled to think of gifts for his little cousins. All four of them loved Angry Birds, but their parents had already bought every toy and game that Walmart stocked. With the sky-high prices to FedEx online orders overnight, my guy was ready to wave the white flag and wrap each of them a paperclip.

 

As I prepared the adults’ presents, cornbread-in-a-jar, I nearly knocked over a box of Rice Krispies while reaching for the sugar, which caused the light bulb above my head to flicker.

 

What about making Rice-Krispie-treats-in-a-jar for the kids?

And not just any Rice Krispie treats… Funfetti rice krispie treats.

 

My guy loved the idea so much that I almost gave him his own jar! Except we ran out of glassware… So I mixed up a batch for him after the holidays instead.

Funfetti Rice Krispie Treats

makes 16

Feel free to substitute other sprinkles, but try to avoid the tiny multi-colored balls. They bleed all over the place!

3 c. puffed rice cereal

3 tbsp multi-colored stick sprinkles

1 tbsp butter

2¼ c. mini marshmallows

  1. Grease an 8” x 8” baking pan, and set aside.
  2. In a large bowl, stir together the cereal and sprinkles. In a large pot, melt the butter over medium-low heat. Add the marshmallows, and stir constantly until melted.
  3. Pour the marshmallow mixture over the cereal, and stir with a spatula until all of the cereal is coated. Spread the cereal mixture into the prepared pan, and press down using greased hands or wax paper. Let the treats cool slightly before cutting into 16 squares.

      Thanks! They were a big hit. Everyone loved the sprinkles, especially the little kids. (And my guy ate 4 as soon as I finished photographing them!)

    I loved rice krispie treats when I was a kid. My mum never made them (because she thought they were too unhealthy) so I was always excited to visit a friend or go to a birthday party where I could eat them. They were like a forbidden treat.

      As a child, the main times I got to eat rice krispie treats were after soccer games! Each week, a parent brought fruit for half-time and a snack for after the match. My parents always brought fruit juice and healthy granola bars, but some parents spoiled us with rice krispie treats. I loved those games!

      Me too, I love bright colors! They make me smile. These treats disappeared too quickly though; I’ll have to make another batch with even more sprinkles!

      I definitely could too, but I tried to limit myself to just one so my guy could have as many as he wanted… I gave almost all of my gifts in jars this year! I made a school supplies jar for my brother, a stress survival jar for my mom, and a hiking helper jar for my dad. It was really fun to decorate the jars too!

      I’ll be sure to make you a jar the next time I see you! I love my jarred gifts… They’re so fun to make, and it’s really easy to personalize them for each recipient!

      Thanks! The cereal and sprinkles will keep for a very long time. The marshmallows begin to stick to each other after a few weeks, but since you’ll melt them down for the recipe, that doesn’t really matter too much.

    That’s adorable and practical! What did the kids think of the food gifts? I’ve always wondered how’d kids respond to getting food for presents. As a kid I loved getting choccy and stuff but I also got other gifts from them.

      From what I heard, they loved them! (And the parents loved them too, mainly because we made each kid their own and didn’t make siblings share…) I loved chocolate and candy canes as a kid, but I didn’t like it so much when I got healthier food!

    Is this the right amounts for putting in a jar? I love the idea of the fluffy white marshmallows topped by sprinkles!

      Just about! I used a larger sized mason jar for the gifts, and I put 3 cups of rice krispies, 3 tablespoons of sprinkles, and 2 cups of marshmallows inside. (My guy likes his rice krispie treats with extra marshmallows, which is why I added the extra ¼ cup in the recipe above.)

      Thank you! They were definitely tasty… We finished them off so quickly that I barely had time to photograph them! I’d say that’s the mark of a good recipe. ;]

      Thank you! I try to make many of my recipes vegan-friendly with just a few substitutions (like Earth balance for butter, or Ener-G for eggs [I almost exclusively use Ener-G in my baking!], or any type of milk). I haven’t tried vegan rice krispie treats, but I’ve seen corn syrup used instead of marshmallows! Maybe that would work?
