Sweet and Sneaky Ways to Eat Your Veggies: Pumpkin

aka “The Best Thanksgiving Vegetable”

pumpkin custard

At Thanksgiving, I usually serve myself a two-bite slice of turkey, a tablespoon of mashed potatoes, and three green beans. (Okay, slight exaggeration.) Then, while everyone else complains of stomach cramps and food comas, I still have plenty of room for dessert and get first dibs on the pumpkin pie!   Continue reading for recipe.

Sweet and Sneaky Ways to Eat Your Veggies: Onions

aka “Sweet Machine Malfunctions”

A year ago, my friend and I stood glaring at the SPR machine. (Surface Plasmon Resonance, in case you were wondering.) In theory, we could twiddle a few knobs and punch a few buttons to calibrate the monster. In actuality, it hiccuped and laughed in our faces.

So we ignored it to talk about food.   Continue reading for recipe.

Sweet and Sneaky Ways to Eat Your Veggies: Carrots

aka “Earning Desserts as a Five-Year-Old”

I always ate my three daily servings of fruit as a kid. I drank my “crazy drink” (OJ + fizzy water) through a straw at breakfast, munched on apple slices at lunch, and popped grapes like candy as an after school snack. But vegetables?

Totally different story.   Continue reading for recipe.

Peanut Butter at a Dinner Party

peanut butter noodles with chicken

I was invited to my first-ever dinner party! Somebody actually wanted to have dinner with me! Never mind the fact that it’s virtual and I can’t actually eat any of the food… (Well, maybe I could try to lick my computer screen. But that wouldn’t taste very good.)

Valerie at Atlanta Mom of Three extended an invitation to participate in her potluck next week, and I wanted to cook the perfect dish to share. Something kid-friendly but classy, something fast but flavorful, something easy but healthy…   Continue reading for recipe.

Jars, Just in Time

funfetti rice krispie treats

Two days before Christmas, my guy scrambled to think of gifts for his little cousins. All four of them loved Angry Birds, but their parents had already bought every toy and game that Walmart stocked. With the sky-high prices to FedEx online orders overnight, my guy was ready to wave the white flag and wrap each of them a paperclip.

As I prepared the adults’ presents, cornbread-in-a-jar, I nearly knocked over a box of Rice Krispies while reaching for the sugar, which caused the light bulb above my head to flicker.

What about making Rice-Krispie-treats-in-a-jar for the kids?   Continue reading for recipe.

Sweets for the Sweet

double ginger biscotti

On Christmas Eve when my man set my wrapped gift under the tree, he placed another present down with it. Although I had only met her once, his grandmother sent me a set of four glittery red boxes filled with saltwater taffy, caramel corn, and peanut brittle. How sweet! (No pun intended…)   Continue reading for recipe.

Better Than a PB&J

peanut butter, banana, and jelly panini (PBB&J)

Many children dread this Monday morning. Classes begin again, and the school bus will shuttle them off to memorize more multiplication tables and write big book reports. The recess bell sounds too quickly, the lunch break ends too soon, and the drive back home drags on and on.

But they aren’t alone.   Continue reading for recipe.

The Farkle Risk

While waiting for the ball to drop on New Year’s Eve, we watched four five reruns of Big Bang Theory, ate leftover Oreo Dream cheesecake from the Cheesecake Factory, and played Farkle. Despite my staunch chocolate and cookie addictions, the last part was the highlight of the night.   Continue reading for recipe.

Best Meals of 2012

I know, the logical order would have been to start with my favorite meals of the year and finish with desserts… But I love sweets so much that I couldn’t wait to share those with you! I promise I didn’t forget about my top breakfast, lunch, and dinner dishes though: here they are!  Continue reading for recipes.

Best Desserts of 2012

With New Year’s Eve drawing near, I started flipping through photos from 2012 to smile at the year’s fun memories. As I scrolled through the albums, I laughed… All of my pictures were of food! (Well okay, except for the summer vacation to Kauai. And the father-daughter trip to Arizona.)

So I can’t exactly share very many memories, seeing as I barely remember lots of them, but I can relive a few of my favorite recipes instead!   Continue reading for recipes.
