Sandwich on Holiday

Ever since I started kindergarten, I’ve packed my lunch to bring to school (and now work) every single day. I’ve only left my lunchbox at home a handful of times in nearly 20 years for the occasional classroom pizza party or catered meal by Boss.

Shockingly enough, I still enjoy biting into a simple sandwich. Normally it’s just a few slices of meat between my bread with a squeeze of mustard for moisture. Recently, I started getting fancy by adding crisp shredded lettuce. (A real splurge, I know!) But I almost always skip out on adding any more toppings, especially if they’ll turn my sandwich wet and soggy while it sits on my desk all morning.   Continue reading for recipe.

Better Than a PB&J

peanut butter, banana, and jelly panini (PBB&J)

Many children dread this Monday morning. Classes begin again, and the school bus will shuttle them off to memorize more multiplication tables and write big book reports. The recess bell sounds too quickly, the lunch break ends too soon, and the drive back home drags on and on.

But they aren’t alone.   Continue reading for recipe.

Best Meals of 2012

I know, the logical order would have been to start with my favorite meals of the year and finish with desserts… But I love sweets so much that I couldn’t wait to share those with you! I promise I didn’t forget about my top breakfast, lunch, and dinner dishes though: here they are!  Continue reading for recipes.

Got Beef?

spicy steak sandwiches

For my final sandwich, I plucked up the courage to face a really big fear: cooking steak. My man absolutely adores steak and orders it every chance he gets when dining out. Too scared of failing to measure up to those dishes, I refused to buy beef—let alone make it for dinner—and always chose chicken instead.

But.

How could I learn unless I actually tried? I’m pretty sure the sky wouldn’t fall if I under seasoned it, or the world wouldn’t end if I turned it into leather. So. Deep breath. March into the store, meander to the back, and…   Continue reading for recipe.

It’s Still Sandwich Season!

Just when I decided to beat the heat with a little sandwich streak, the winds blew into town and the temperature dropped 20°. Great. The seasons are mocking me… As the bag of sandwich things threatened to mol, I wanted to put them out of their misery with a protein-packed filling. But what?   Continue reading for recipe.

Not Cooking? Not a Problem!

vegetarian Greek sandwiches

This past weekend, thermometers threatened to shatter as the sun glared down at my tiny California town. Yes, fall officially began on September 22, but a week later the sun was still ignoring our calendar and converted our entire house into an oven.

Too unmotivated to cook (102° temperatures can do that to a girl), I sweated all the way to the store and grabbed a pint of ice cream to cool off. (Yes, I did buy it later. And was so tempted to eat all of it as I walked back home.) I also paid for a bag of sandwich thins, thinking that those sounded much more appealing than the baked chicken I had originally considered making.   Continue reading for recipe.

Role Models, Dust, and a Sloppy Night

Yesterday, a coworker told me, “You’re my idol!” Me. A quiet, shy, pretty darn average girl. I’ll spare you her reasons—they’re all job-related anyway—but her surprising statement and sweet sentiments easily turned my day around.   Continue reading for recipe.
